Ingredients
| 1 cup | basmati rice |
| 2 cups | water |
| 1 cup | jaggery |
| 2 tablespoons | ghee |
| 4 | green cardamom pods |
| 2 tablespoons | raisins |
| 2 tablespoons | cashew nuts |
| 1 tablespoon | sliced almonds |
| 1 pinch | saffron threads |
| 1 | cinnamon stick |
| 1 | bay leaf |
| — | salt to taste |
Instructions
- 1 Wash and soak the basmati rice in water for 30 minutes, then drain.
- 2 In a saucepan, bring 2 cups of water to a boil.
- 3 Add the soaked rice and a pinch of salt to the boiling water.
- 4 Cook the rice until it is 70% cooked, then drain and set aside.
- 5 In another pan, heat ghee over medium heat.
- 6 Add green cardamom pods, cinnamon stick, and bay leaf to the ghee and sauté until fragrant.
- 7 Add raisins, cashew nuts, and sliced almonds to the pan and sauté until the nuts are golden brown.
- 8 Dissolve the jaggery in 1/4 cup of water and add to the pan.
- 9 Add the partially cooked rice to the jaggery mixture and mix well.
- 10 Sprinkle saffron threads over the rice and cover the pan.
- 11 Cook on low heat for about 10-15 minutes until the rice is fully cooked and the flavors are well combined.
- 12 Fluff the rice gently with a fork before serving.
Tips
For extra flavour, use whole spices in the ghee first.
