Ingredients

1 cup basmati rice
2 cups water
1 cup jaggery
2 tablespoons ghee
4 green cardamom pods
2 tablespoons raisins
2 tablespoons cashew nuts
1 tablespoon sliced almonds
1 pinch saffron threads
1 cinnamon stick
1 bay leaf
salt to taste

Instructions

  1. 1 Wash and soak the basmati rice in water for 30 minutes, then drain.
  2. 2 In a saucepan, bring 2 cups of water to a boil.
  3. 3 Add the soaked rice and a pinch of salt to the boiling water.
  4. 4 Cook the rice until it is 70% cooked, then drain and set aside.
  5. 5 In another pan, heat ghee over medium heat.
  6. 6 Add green cardamom pods, cinnamon stick, and bay leaf to the ghee and sauté until fragrant.
  7. 7 Add raisins, cashew nuts, and sliced almonds to the pan and sauté until the nuts are golden brown.
  8. 8 Dissolve the jaggery in 1/4 cup of water and add to the pan.
  9. 9 Add the partially cooked rice to the jaggery mixture and mix well.
  10. 10 Sprinkle saffron threads over the rice and cover the pan.
  11. 11 Cook on low heat for about 10-15 minutes until the rice is fully cooked and the flavors are well combined.
  12. 12 Fluff the rice gently with a fork before serving.

Tips

For extra flavour, use whole spices in the ghee first.
