Ingredients
| 1 cup | fresh fenugreek leaves (methi) |
| 4 cloves | garlic |
| 2 tablespoons | peanuts |
| 4 pieces | green chilies |
| 1 tablespoon | oil |
| — | salt to taste |
Instructions
- 1 Wash the fenugreek leaves thoroughly and chop them finely.
- 2 Heat oil in a pan over medium heat.
- 3 Add peanuts to the pan and roast them until they are golden brown. Remove and set aside.
- 4 In the same pan, add garlic cloves and green chilies. Sauté until the garlic turns golden.
- 5 Add the chopped fenugreek leaves to the pan and sauté for 2-3 minutes until they wilt.
- 6 Add the roasted peanuts back to the pan and mix well.
- 7 Season with salt to taste and sauté for another minute.
- 8 Transfer the mixture to a mortar and pestle and coarsely grind it to form a coarse paste.
Tips
Adjust the number of green chilies according to your spice preference. Serve as a side dish with rice or roti.
