Ingredients
| 6 | large green chili peppers (Mirchi) |
| 1 cup | besan (gram flour) |
| 2 tablespoons | rice flour |
| 1 teaspoon | red chili powder |
| 1/2 teaspoon | turmeric powder |
| 1/2 teaspoon | carom seeds (ajwain) |
| 1/4 teaspoon | baking soda |
| — | salt to taste |
| 1 cup | water |
| — | oil for deep frying |
Instructions
- 1 Wash and pat dry the green chili peppers. Make a slit lengthwise on each chili, keeping the stem intact, and remove the seeds if you prefer less heat.
- 2 In a mixing bowl, combine besan, rice flour, red chili powder, turmeric powder, carom seeds, baking soda, and salt.
- 3 Gradually add water to the dry ingredients, mixing well to form a smooth, thick batter.
- 4 Heat oil in a deep frying pan over medium heat.
- 5 Dip each chili pepper into the batter, ensuring it is well-coated.
- 6 Carefully drop the batter-coated chili peppers into the hot oil.
- 7 Fry until golden brown and crisp, turning occasionally for even cooking.
- 8 Remove the bajjis from the oil using a slotted spoon and drain on paper towels to remove excess oil.
- 9 Serve hot with chutney or sauce of your choice.
Tips
For a tangy twist, stuff the chilies with a mixture of tamarind paste and spices before dipping in the batter.
