Ingredients

Green Chili Pepper 6 Green Chili Pepper
Gram Flour 1 cup Gram Flour
rice flour 2 tablespoons Rice flour
red chili powder 1 teaspoon Red chili powder
turmeric powder 1/2 teaspoon Turmeric powder
Carom Seed 1/2 teaspoon Carom Seed
baking soda 1/4 teaspoon Baking soda
salt Salt , to taste
water 1 cup Water
oil Oil , for deep frying

Instructions

  1. 1 Wash and pat dry the green chili peppers. Make a slit lengthwise on each chili, keeping the stem intact, and remove the seeds if you prefer less heat.
  2. 2 In a mixing bowl, combine besan, rice flour, red chili powder, turmeric powder, carom seeds, baking soda, and salt.
  3. 3 Gradually add water to the dry ingredients, mixing well to form a smooth, thick batter.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Dip each chili pepper into the batter, ensuring it is well-coated.
  6. 6 Carefully drop the batter-coated chili peppers into the hot oil.
  7. 7 Fry until golden brown and crisp, turning occasionally for even cooking.
  8. 8 Remove the bajjis from the oil using a slotted spoon and drain on paper towels to remove excess oil.
  9. 9 Serve hot with chutney or sauce of your choice.

Tips

For a tangy twist, stuff the chilies with a mixture of tamarind paste and spices before dipping in the batter.
