Gram flour and wheat flatbread — besan (chickpea flour) blended with atta (whole wheat) in a roughly equal ratio, seasoned with ajwain, fenugreek leaves, red chilli, and cumin, kneaded into a firm dough and rolled into thick rounds cooked on a tawa with a smear of ghee or mustard oil. The besan gives the roti a denser texture, a pronounced nuttiness, and a slightly crumbled interior compared to plain wheat roti. Highly nourishing and protein-rich — the everyday flatbread in Dogra, Punjabi, and Haryanvi homes alongside dal.

Ingredients

whole wheat flour 1 cup Whole wheat flour
Gram Flour 1 cup Gram Flour
Onion 1 medium Onion , finely chopped
Cilantro 2 tablespoons Cilantro , chopped
Carom Seed 1 teaspoon Carom Seed
red chili powder 1 teaspoon Red chili powder
Cumin 1 teaspoon Cumin , seeds
turmeric powder 1 teaspoon Turmeric powder
salt 1 teaspoon Salt
ghee or oil 2 tablespoons Ghee or oil
water Water , as needed

Instructions

  1. 1 In a large mixing bowl, combine whole wheat flour, gram flour, chopped onion, coriander leaves, carom seeds, red chili powder, cumin seeds, turmeric powder, and salt.
  2. 2 Mix the dry ingredients well, then add ghee or oil and mix until the mixture resembles breadcrumbs.
  3. 3 Gradually add water and knead into a smooth, firm dough. Cover and let it rest for 15 minutes.
  4. 4 Divide the dough into small balls of equal size.
  5. 5 Roll each ball into a flat, round disc using a rolling pin, dusting with flour as needed to prevent sticking.
  6. 6 Heat a tawa or flat skillet over medium heat.
  7. 7 Place the rolled roti on the heated tawa and cook until bubbles start to form on the surface.
  8. 8 Flip the roti and cook the other side until golden brown spots appear.
  9. 9 Apply a little ghee or oil on both sides and cook for another minute on each side.
  10. 10 Repeat the process with the remaining dough balls.
  11. 11 Serve hot with yogurt, pickles, or curry.

Tips

For added flavor, you can add finely chopped green chilies or grated ginger to the dough.
