Ingredients
| 2 medium | sweet potatoes |
| 2 tablespoons | mustard oil |
| 1 teaspoon | panch phoron |
| 1 medium | onion, finely chopped |
| 1 teaspoon | ginger paste |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | cumin powder |
| 1 cup | water |
| — | salt to taste |
| 1 tablespoon | sugar |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Peel and cut the sweet potatoes into medium-sized cubes.
- 2 Heat mustard oil in a pan until it starts to smoke slightly, then reduce the heat.
- 3 Add panch phoron and let it splutter for a few seconds.
- 4 Add the chopped onion and sauté until golden brown.
- 5 Stir in the ginger paste and sauté for another minute.
- 6 Add the sweet potato cubes, turmeric powder, red chili powder, cumin powder, and salt. Mix well.
- 7 Pour in the water and cover the pan. Cook on medium heat until the sweet potatoes are tender.
- 8 Add sugar and mix well. Cook for another 2-3 minutes until the sugar is dissolved and the curry thickens slightly.
- 9 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, you can add a pinch of garam masala at the end of cooking.
