Ingredients

2 medium sweet potatoes
2 tablespoons mustard oil
1 teaspoon panch phoron
1 medium onion, finely chopped
1 teaspoon ginger paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 cup water
salt to taste
1 tablespoon sugar
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Peel and cut the sweet potatoes into medium-sized cubes.
  2. 2 Heat mustard oil in a pan until it starts to smoke slightly, then reduce the heat.
  3. 3 Add panch phoron and let it splutter for a few seconds.
  4. 4 Add the chopped onion and sauté until golden brown.
  5. 5 Stir in the ginger paste and sauté for another minute.
  6. 6 Add the sweet potato cubes, turmeric powder, red chili powder, cumin powder, and salt. Mix well.
  7. 7 Pour in the water and cover the pan. Cook on medium heat until the sweet potatoes are tender.
  8. 8 Add sugar and mix well. Cook for another 2-3 minutes until the sugar is dissolved and the curry thickens slightly.
  9. 9 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, you can add a pinch of garam masala at the end of cooking.
