Recipe

Ingredients

1 cup basmati rice
2 cups water
1/2 cup sugar
2 tablespoons ghee
1/4 teaspoon cardamom powder
2 tablespoons raisins
2 tablespoons cashew nuts
1/4 teaspoon saffron strands
pinch of salt

Instructions

  1. 1 Wash and soak the basmati rice in water for 20 minutes.
  2. 2 Drain the rice and set aside.
  3. 3 Heat ghee in a pan over medium heat.
  4. 4 Add cashew nuts and raisins, and sauté until the cashews turn golden and the raisins puff up. Remove and set aside.
  5. 5 In the same pan, add the soaked rice and sauté for 2-3 minutes.
  6. 6 Add 2 cups of water, a pinch of salt, and saffron strands to the rice.
  7. 7 Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer until the rice is cooked and water is absorbed.
  8. 8 Once the rice is cooked, add sugar and cardamom powder. Mix gently.
  9. 9 Cover and let it cook on low heat for another 5 minutes until the sugar is dissolved.
  10. 10 Garnish with the sautéed cashew nuts and raisins before serving.

Tips

For a richer taste, you can add a few drops of rose water or kewra essence.
