Ingredients
| 1 cup | basmati rice |
| 2 cups | water |
| 1 cup | jaggery |
| 2 tablespoons | ghee |
| 1/4 cup | mixed nuts (almonds, cashews, raisins) |
| 1/4 teaspoon | cardamom powder |
| — | saffron strands (a pinch) |
| — | salt to taste |
Instructions
- 1 Wash and soak the basmati rice in water for 30 minutes. Drain and set aside.
- 2 In a heavy-bottomed pan, heat the ghee over medium heat.
- 3 Add the mixed nuts and sauté until they are golden brown. Remove and set aside.
- 4 In the same pan, add the drained rice and sauté for a couple of minutes until the rice is well coated with ghee.
- 5 Add 2 cups of water and a pinch of salt to the rice. Bring it to a boil.
- 6 Reduce the heat to low, cover the pan, and let the rice cook until almost done, about 10-12 minutes.
- 7 In a separate small pan, melt the jaggery with a little water until it forms a syrup. Strain to remove impurities.
- 8 Once the rice is almost cooked, gently stir in the jaggery syrup, cardamom powder, and saffron strands.
- 9 Cover and cook on low heat for another 5-7 minutes until the rice is fully cooked and the flavors meld together.
- 10 Garnish with the sautéed nuts and serve warm.
Tips
For extra flavor, you can add a few whole spices like cloves and cinnamon while sautéing the rice in ghee.
