Ingredients

2 cups all-purpose flour
1 cup sugar
1/4 cup ghee
1/2 cup water
1/4 teaspoon baking soda
oil for deep frying

Instructions

  1. 1 In a mixing bowl, combine the all-purpose flour and baking soda.
  2. 2 Add ghee to the flour mixture and mix well until it resembles breadcrumbs.
  3. 3 Gradually add water to form a stiff dough. Knead well.
  4. 4 Cover the dough with a damp cloth and let it rest for 15 minutes.
  5. 5 Divide the dough into small balls and roll each ball into a thin sheet.
  6. 6 Sprinkle sugar evenly over the sheet and fold it into a tight roll.
  7. 7 Cut the roll into 1-inch pieces and press each piece lightly.
  8. 8 Heat oil in a deep frying pan over medium heat.
  9. 9 Fry the khajas in batches until they are golden brown and crispy.
  10. 10 Remove from oil and drain on paper towels.

Tips

Ensure the oil is not too hot to prevent the khajas from browning too quickly.
