Ingredients
| 2 cups | all-purpose flour |
| 1 cup | sugar |
| 1/4 cup | ghee |
| 1/2 cup | water |
| 1/4 teaspoon | baking soda |
| — | oil for deep frying |
Instructions
- 1 In a mixing bowl, combine the all-purpose flour and baking soda.
- 2 Add ghee to the flour mixture and mix well until it resembles breadcrumbs.
- 3 Gradually add water to form a stiff dough. Knead well.
- 4 Cover the dough with a damp cloth and let it rest for 15 minutes.
- 5 Divide the dough into small balls and roll each ball into a thin sheet.
- 6 Sprinkle sugar evenly over the sheet and fold it into a tight roll.
- 7 Cut the roll into 1-inch pieces and press each piece lightly.
- 8 Heat oil in a deep frying pan over medium heat.
- 9 Fry the khajas in batches until they are golden brown and crispy.
- 10 Remove from oil and drain on paper towels.
Tips
Ensure the oil is not too hot to prevent the khajas from browning too quickly.
