Ingredients
| 1 cup | sattu (roasted gram flour) |
| 2 cups | basmati rice |
| 4 cups | water |
| 1 tablespoon | mustard oil |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | salt |
| 1 teaspoon | red chili powder |
| 1 | green chili, chopped |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Wash and soak the basmati rice in water for 30 minutes.
- 2 Drain the rice and set aside.
- 3 In a pot, bring 4 cups of water to a boil.
- 4 Add the soaked rice to the boiling water and cook until the rice is 70% cooked, then drain and set aside.
- 5 In another pan, heat mustard oil over medium heat.
- 6 Add cumin seeds and let them splutter.
- 7 Add chopped green chili and sauté for a minute.
- 8 Add turmeric powder, red chili powder, and salt, and stir well.
- 9 Add the sattu (roasted gram flour) and mix thoroughly with the spices.
- 10 Gradually add a little water to the sattu mixture to form a thick paste, stirring continuously to avoid lumps.
- 11 Add the partially cooked rice to the sattu mixture and gently mix to combine.
- 12 Cover the pan and let it cook on low heat for about 10-15 minutes until the rice is fully cooked and has absorbed the flavors.
- 13 Garnish with fresh coriander leaves before serving.
Tips
For a smokier flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
