Ingredients

1 cup sattu (roasted gram flour)
2 cups basmati rice
4 cups water
1 tablespoon mustard oil
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon salt
1 teaspoon red chili powder
1 green chili, chopped
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Wash and soak the basmati rice in water for 30 minutes.
  2. 2 Drain the rice and set aside.
  3. 3 In a pot, bring 4 cups of water to a boil.
  4. 4 Add the soaked rice to the boiling water and cook until the rice is 70% cooked, then drain and set aside.
  5. 5 In another pan, heat mustard oil over medium heat.
  6. 6 Add cumin seeds and let them splutter.
  7. 7 Add chopped green chili and sauté for a minute.
  8. 8 Add turmeric powder, red chili powder, and salt, and stir well.
  9. 9 Add the sattu (roasted gram flour) and mix thoroughly with the spices.
  10. 10 Gradually add a little water to the sattu mixture to form a thick paste, stirring continuously to avoid lumps.
  11. 11 Add the partially cooked rice to the sattu mixture and gently mix to combine.
  12. 12 Cover the pan and let it cook on low heat for about 10-15 minutes until the rice is fully cooked and has absorbed the flavors.
  13. 13 Garnish with fresh coriander leaves before serving.

Tips

For a smokier flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
