Ingredients
| 1 large | banana blossom (mocha) |
| 2 tablespoons | mustard oil |
| 1 teaspoon | panch phoron |
| 1 medium | potato, diced |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | cumin powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | red chili powder |
| 1 tablespoon | ginger paste |
| 2 tablespoons | grated coconut |
| 1 teaspoon | sugar |
| to taste | salt |
| 1 cup | water |
| 2 tablespoons | ghee |
| 2 pieces | bay leaves |
| 1 | dried red chili |
Instructions
- 1 Clean the banana blossom by removing the outer layers and collecting the florets. Chop them finely and soak in water with a pinch of turmeric and salt for 15 minutes.
- 2 Heat mustard oil in a pan and add panch phoron, bay leaves, and dried red chili. Let them splutter.
- 3 Add diced potatoes and sauté until they start to turn golden.
- 4 Add the chopped banana blossom and stir well.
- 5 Mix in turmeric powder, cumin powder, coriander powder, red chili powder, and ginger paste. Cook for 5-7 minutes.
- 6 Add salt, sugar, and water. Cover and cook on low heat until the banana blossom and potatoes are tender.
- 7 Once the water is absorbed and the vegetables are cooked, add grated coconut and ghee. Mix well.
- 8 Cook for another 2-3 minutes and then remove from heat. Serve hot.
Tips
To prevent discoloration, keep the chopped banana blossom in water with turmeric and salt.
