Ingredients

Banana Blossom 1 large Banana Blossom
mustard oil 2 tablespoons Mustard oil
Panch Phoron 1 teaspoon Panch Phoron
Potato 1 medium Potato , diced
turmeric powder 1 teaspoon Turmeric powder
Cumin 1 teaspoon Cumin , powder
coriander powder 1 teaspoon Coriander powder
red chili powder 1 teaspoon Red chili powder
Ginger 1 tablespoon Ginger , paste
Coconut 2 tablespoons Coconut , grated
sugar 1 teaspoon Sugar
salt to taste Salt
water 1 cup Water
ghee 2 tablespoons Ghee
Bay Leaf 2 pieces Bay Leaf
Chili 1 Chili , dried red

Instructions

  1. 1 Clean the banana blossom by removing the outer layers and collecting the florets. Chop them finely and soak in water with a pinch of turmeric and salt for 15 minutes.
  2. 2 Heat mustard oil in a pan and add panch phoron, bay leaves, and dried red chili. Let them splutter.
  3. 3 Add diced potatoes and sauté until they start to turn golden.
  4. 4 Add the chopped banana blossom and stir well.
  5. 5 Mix in turmeric powder, cumin powder, coriander powder, red chili powder, and ginger paste. Cook for 5-7 minutes.
  6. 6 Add salt, sugar, and water. Cover and cook on low heat until the banana blossom and potatoes are tender.
  7. 7 Once the water is absorbed and the vegetables are cooked, add grated coconut and ghee. Mix well.
  8. 8 Cook for another 2-3 minutes and then remove from heat. Serve hot.

Tips

To prevent discoloration, keep the chopped banana blossom in water with turmeric and salt.
