Ingredients

1 cup moong dal (split green gram)
1 cup mixed vegetables (potato, carrot, pumpkin)
1 tablespoon ghee
1 teaspoon panch phoron (five-spice blend)
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon ginger paste
1 teaspoon red chili powder
2 cups water
salt to taste
1 tablespoon fresh coriander leaves, chopped

Instructions

  1. 1 Wash the moong dal thoroughly and soak it in water for 15 minutes.
  2. 2 Heat ghee in a pressure cooker over medium heat.
  3. 3 Add panch phoron and let it splutter.
  4. 4 Add ginger paste and sauté for a minute until the raw smell disappears.
  5. 5 Add the mixed vegetables and sauté for 2-3 minutes.
  6. 6 Drain the soaked moong dal and add it to the cooker.
  7. 7 Add turmeric powder, cumin powder, red chili powder, and salt.
  8. 8 Mix everything well and add water.
  9. 9 Close the lid of the pressure cooker and cook for 2-3 whistles.
  10. 10 Allow the pressure to release naturally, then open the lid.
  11. 11 Garnish with chopped coriander leaves before serving.

Tips

For a richer flavor, you can dry roast the moong dal before soaking.
