Ingredients
| 1 cup | moong dal (split green gram) |
| 1 cup | mixed vegetables (potato, carrot, pumpkin) |
| 1 tablespoon | ghee |
| 1 teaspoon | panch phoron (five-spice blend) |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | cumin powder |
| 1 teaspoon | ginger paste |
| 1 teaspoon | red chili powder |
| 2 cups | water |
| — | salt to taste |
| 1 tablespoon | fresh coriander leaves, chopped |
Instructions
- 1 Wash the moong dal thoroughly and soak it in water for 15 minutes.
- 2 Heat ghee in a pressure cooker over medium heat.
- 3 Add panch phoron and let it splutter.
- 4 Add ginger paste and sauté for a minute until the raw smell disappears.
- 5 Add the mixed vegetables and sauté for 2-3 minutes.
- 6 Drain the soaked moong dal and add it to the cooker.
- 7 Add turmeric powder, cumin powder, red chili powder, and salt.
- 8 Mix everything well and add water.
- 9 Close the lid of the pressure cooker and cook for 2-3 whistles.
- 10 Allow the pressure to release naturally, then open the lid.
- 11 Garnish with chopped coriander leaves before serving.
Tips
For a richer flavor, you can dry roast the moong dal before soaking.
