Ingredients

2 cups basmati rice
3 tablespoons sugar
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon saffron threads
2 tablespoons rose water
3 tablespoons butter
1 pinch salt
3 cups water

Instructions

  1. 1 Wash and soak the basmati rice in water for 30 minutes, then drain.
  2. 2 In a large pot, bring 3 cups of water to a boil.
  3. 3 Add the soaked rice to the boiling water and cook until the rice is half-cooked, about 7-8 minutes. Drain and set aside.
  4. 4 In the same pot, melt the butter over medium heat.
  5. 5 Add sugar, ground cardamom, ground cinnamon, and saffron threads to the melted butter. Stir until the sugar dissolves and the mixture is fragrant.
  6. 6 Add the half-cooked rice back into the pot, gently mixing it with the spiced butter mixture.
  7. 7 Sprinkle the rose water over the rice and add a pinch of salt.
  8. 8 Cover the pot with a tight-fitting lid, reduce the heat to low, and let the rice steam for about 20-25 minutes until fully cooked and fluffy.
  9. 9 Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Tips

For extra flavour, use whole spices in the butter first and strain them out before adding the rice.
