Ingredients
| 6 | large green chilies |
| 1 cup | gram flour (besan) |
| 1/4 teaspoon | turmeric powder |
| 1/2 teaspoon | red chili powder |
| 1/4 teaspoon | asafoetida |
| 1/2 teaspoon | cumin seeds |
| 1/2 teaspoon | baking soda |
| — | salt to taste |
| 1/2 cup | water |
| — | oil for deep frying |
Instructions
- 1 Wash the green chilies and make a slit lengthwise, removing seeds if desired for less heat.
- 2 In a mixing bowl, combine gram flour, turmeric powder, red chili powder, asafoetida, cumin seeds, baking soda, and salt.
- 3 Gradually add water to the dry ingredients, mixing to form a smooth, thick batter.
- 4 Heat oil in a deep frying pan over medium heat.
- 5 Dip each chili into the batter, ensuring it is fully coated.
- 6 Carefully place the coated chilies into the hot oil and fry until golden brown and crispy.
- 7 Remove the bajjis from the oil and drain on paper towels to remove excess oil.
- 8 Serve hot with coconut chutney or tomato ketchup.
Tips
For a spicier version, leave the seeds in the chilies or choose spicier varieties.
