Ingredients

6 large green chilies
1 cup gram flour (besan)
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/4 teaspoon asafoetida
1/2 teaspoon cumin seeds
1/2 teaspoon baking soda
salt to taste
1/2 cup water
oil for deep frying

Instructions

  1. 1 Wash the green chilies and make a slit lengthwise, removing seeds if desired for less heat.
  2. 2 In a mixing bowl, combine gram flour, turmeric powder, red chili powder, asafoetida, cumin seeds, baking soda, and salt.
  3. 3 Gradually add water to the dry ingredients, mixing to form a smooth, thick batter.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Dip each chili into the batter, ensuring it is fully coated.
  6. 6 Carefully place the coated chilies into the hot oil and fry until golden brown and crispy.
  7. 7 Remove the bajjis from the oil and drain on paper towels to remove excess oil.
  8. 8 Serve hot with coconut chutney or tomato ketchup.

Tips

For a spicier version, leave the seeds in the chilies or choose spicier varieties.
