2 cups | Drumstick , cut into 2-inch pieces |

1 cup | Coconut , grated |
|
1 teaspoon | Cumin , seeds |
|
3 cloves | Garlic , finely chopped |
|
1 inch | Ginger , chopped |
|
3 | Green Chili , slit |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 tablespoon | Coconut oil |
|
1 teaspoon | Mustard Seed |
|
2 sprigs | Curry Leaf |
|
1 | Onion , sliced |
|
1 cup | Water |

Instructions
- 1 Grind the grated coconut, cumin seeds, garlic, and ginger into a smooth paste with a little water. Set aside.
- 2 In a pot, add the drumstick pieces, water, turmeric powder, red chili powder, and salt. Cook until the drumsticks are tender.
- 3 Add the coconut paste to the cooked drumsticks and simmer for 5-7 minutes.
- 4 In a separate pan, heat coconut oil and add mustard seeds. Once they splutter, add curry leaves and sliced onion. Sauté until the onion turns golden brown.
- 5 Pour the tempering over the curry and mix well.
- 6 Simmer the curry for another 2-3 minutes to allow the flavors to meld together.
- 7 Serve hot with steamed rice or roti.
Tips
For a richer flavor, you can add a small piece of tamarind while cooking the drumsticks.
