Ingredients

Drumstick 2 cups Drumstick , cut into 2-inch pieces
Coconut 1 cup Coconut , grated
Cumin 1 teaspoon Cumin , seeds
Garlic 3 cloves Garlic , finely chopped
Ginger 1 inch Ginger , chopped
Green Chili 3 Green Chili , slit
turmeric powder 1 teaspoon Turmeric powder
red chili powder 1 teaspoon Red chili powder
coconut oil 1 tablespoon Coconut oil
Mustard Seed 1 teaspoon Mustard Seed
Curry Leaf 2 sprigs Curry Leaf
Onion 1 Onion , sliced
water 1 cup Water
salt Salt , to taste

Instructions

  1. 1 Grind the grated coconut, cumin seeds, garlic, and ginger into a smooth paste with a little water. Set aside.
  2. 2 In a pot, add the drumstick pieces, water, turmeric powder, red chili powder, and salt. Cook until the drumsticks are tender.
  3. 3 Add the coconut paste to the cooked drumsticks and simmer for 5-7 minutes.
  4. 4 In a separate pan, heat coconut oil and add mustard seeds. Once they splutter, add curry leaves and sliced onion. Sauté until the onion turns golden brown.
  5. 5 Pour the tempering over the curry and mix well.
  6. 6 Simmer the curry for another 2-3 minutes to allow the flavors to meld together.
  7. 7 Serve hot with steamed rice or roti.

Tips

For a richer flavor, you can add a small piece of tamarind while cooking the drumsticks.
