Ingredients

2 cups drumsticks (Muringakka), cut into 2-inch pieces
1 cup grated coconut
1 teaspoon cumin seeds
3 cloves garlic
1 inch ginger, chopped
3 green chilies, slit
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon coconut oil
1 teaspoon mustard seeds
2 sprigs curry leaves
1 onion, sliced
1 cup water
salt to taste

Instructions

  1. 1 Grind the grated coconut, cumin seeds, garlic, and ginger into a smooth paste with a little water. Set aside.
  2. 2 In a pot, add the drumstick pieces, water, turmeric powder, red chili powder, and salt. Cook until the drumsticks are tender.
  3. 3 Add the coconut paste to the cooked drumsticks and simmer for 5-7 minutes.
  4. 4 In a separate pan, heat coconut oil and add mustard seeds. Once they splutter, add curry leaves and sliced onion. Sauté until the onion turns golden brown.
  5. 5 Pour the tempering over the curry and mix well.
  6. 6 Simmer the curry for another 2-3 minutes to allow the flavors to meld together.
  7. 7 Serve hot with steamed rice or roti.

Tips

For a richer flavor, you can add a small piece of tamarind while cooking the drumsticks.
