Muttabak
A thin, crispy wheat pancake folded around a filling of spiced minced mutton or chicken, eggs, and onions, then pan-fried in ghee until golden and flaky. Brought to Malabar's coastal ports by Arab and Yemeni traders, muttabak is a popular street food at Kozhikode night bazaars.

1 tablespoon | Ghee |

150 milliliters | Water |
|
200 grams | Beef Or Chicken , minced |
|
1 medium | Onion , finely chopped |
|
2 cloves | Garlic , minced |
|
1 teaspoon | Ginger , minced |
|
1 teaspoon | Coriander powder |
|
1 teaspoon | Cumin , powder |
|
1/2 teaspoon | Turmeric powder |
|
1/2 teaspoon | Black pepper powder |
|
1 teaspoon | Garam masala |
|
2 tablespoons | Cilantro , chopped |
|
2 tablespoons | Mint , chopped |
|
2 large | Egg |

Instructions
- 1 In a bowl, mix the all-purpose flour, salt, and ghee. Gradually add water and knead to form a soft dough. Cover and let it rest for 30 minutes.
- 2 Heat oil in a pan over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
- 3 Add the minced meat to the pan and cook until browned.
- 4 Stir in coriander powder, cumin powder, turmeric powder, black pepper powder, and salt. Cook for another 5 minutes.
- 5 Add garam masala, coriander leaves, and mint leaves. Mix well and remove from heat. Let it cool slightly.
- 6 Divide the dough into small balls. Roll each ball into a thin circle.
- 7 Beat the eggs in a bowl and add a pinch of salt.
- 8 Place a spoonful of the meat mixture in the center of each dough circle. Pour a little beaten egg over the meat.
- 9 Fold the edges of the dough over the filling to form a square parcel.
- 10 Heat oil in a frying pan over medium heat. Fry each parcel until golden brown and crisp on both sides.
- 11 Serve hot with a side of chutney or sauce.
Tips
For a vegetarian version, substitute the meat with a mixture of boiled potatoes and peas.
