Ingredients

500 grams mutton, cut into small pieces
2 tablespoons oil
1 teaspoon fennel seeds
1 teaspoon cumin seeds
2 medium onions, finely sliced
1 tablespoon ginger-garlic paste
2 medium tomatoes, chopped
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon black pepper powder
1 teaspoon coriander powder
1 teaspoon garam masala
salt to taste
1 cup water
2 tablespoons coriander leaves, chopped

Instructions

  1. 1 Heat oil in a heavy-bottomed pan over medium heat.
  2. 2 Add fennel seeds and cumin seeds, and sauté until they crackle.
  3. 3 Add the sliced onions and sauté until golden brown.
  4. 4 Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. 5 Add chopped tomatoes and cook until they become soft and oil starts to separate.
  6. 6 Mix in the red chili powder, turmeric powder, black pepper powder, coriander powder, and salt.
  7. 7 Add the mutton pieces and sauté on high heat for 5-7 minutes until they are well coated with the masala.
  8. 8 Pour in the water, cover, and cook on low heat until the mutton is tender and the oil separates, about 30-40 minutes.
  9. 9 Once the mutton is cooked, increase the heat and add garam masala. Stir well and cook until the mixture is dry and the mutton is well roasted.
  10. 10 Garnish with chopped coriander leaves before serving.

Tips

For a richer flavor, you can add a few curry leaves along with the spices.
