Ingredients
| 500 grams | mutton, cut into small pieces |
| 2 tablespoons | oil |
| 1 teaspoon | fennel seeds |
| 1 teaspoon | cumin seeds |
| 2 medium | onions, finely sliced |
| 1 tablespoon | ginger-garlic paste |
| 2 medium | tomatoes, chopped |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | black pepper powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| — | salt to taste |
| 1 cup | water |
| 2 tablespoons | coriander leaves, chopped |
Instructions
- 1 Heat oil in a heavy-bottomed pan over medium heat.
- 2 Add fennel seeds and cumin seeds, and sauté until they crackle.
- 3 Add the sliced onions and sauté until golden brown.
- 4 Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- 5 Add chopped tomatoes and cook until they become soft and oil starts to separate.
- 6 Mix in the red chili powder, turmeric powder, black pepper powder, coriander powder, and salt.
- 7 Add the mutton pieces and sauté on high heat for 5-7 minutes until they are well coated with the masala.
- 8 Pour in the water, cover, and cook on low heat until the mutton is tender and the oil separates, about 30-40 minutes.
- 9 Once the mutton is cooked, increase the heat and add garam masala. Stir well and cook until the mixture is dry and the mutton is well roasted.
- 10 Garnish with chopped coriander leaves before serving.
Tips
For a richer flavor, you can add a few curry leaves along with the spices.
