Without a strong sweets tradition, this sesame-and-jaggery sticky rice is the closest Naga cooking comes to a dessert.

Ingredients

Sticky Rice 1 cup Sticky Rice
Coconut Milk 1 cup Coconut Milk , thick
sugar 2 tablespoons Sugar
salt 1/4 teaspoon Salt
Sesame Seed 1 teaspoon Sesame Seed
Coconut 1 tablespoon Coconut , grated
water 2 cups Water

Instructions

  1. 1 Wash the sticky rice thoroughly under cold water until the water runs clear.
  2. 2 Soak the rice in water for at least 30 minutes, then drain.
  3. 3 In a pot, bring 2 cups of water to a boil.
  4. 4 Add the soaked rice to the boiling water, reduce the heat to low, and cover the pot.
  5. 5 Cook the rice for about 20 minutes or until the water is absorbed and the rice is tender.
  6. 6 In a separate saucepan, combine the coconut milk, sugar, and salt. Heat gently until the sugar dissolves.
  7. 7 Once the rice is cooked, pour the coconut milk mixture over the rice and stir well.
  8. 8 Cover the pot again and let it sit for another 10 minutes to allow the flavors to meld.
  9. 9 In a small pan, toast the sesame seeds until golden brown.
  10. 10 Serve the sweet sticky rice warm, garnished with toasted sesame seeds and grated coconut.

Tips

For a more authentic flavor, you can use banana leaves to wrap the rice while it cooks.
