Ingredients

1 cup basmati rice
1 cup freshly grated coconut
1 cup jaggery
2 tablespoons ghee
4 cloves
4 green cardamom pods
1 cinnamon stick
10 cashew nuts
10 raisins
2 cups water
salt to taste

Instructions

  1. 1 Wash and soak the basmati rice in water for 20 minutes, then drain.
  2. 2 Heat ghee in a pan and add cloves, cardamom pods, and cinnamon stick.
  3. 3 Add cashew nuts and raisins, sauté until the nuts turn golden brown.
  4. 4 Add the soaked and drained rice to the pan, sauté for 2-3 minutes.
  5. 5 Add 2 cups of water and a pinch of salt, bring to a boil.
  6. 6 Reduce the heat, cover, and cook the rice until it's almost done.
  7. 7 In another pan, melt jaggery with a little water to make a syrup.
  8. 8 Add grated coconut to the jaggery syrup and mix well.
  9. 9 Once the rice is cooked, add the coconut-jaggery mixture to it.
  10. 10 Gently mix everything together and cook for another 5-7 minutes.
  11. 11 Serve warm, garnished with additional nuts if desired.

Tips

For extra flavour, you can add a few strands of saffron soaked in warm milk to the rice.
