Ingredients
| 1 cup | basmati rice |
| 1 cup | freshly grated coconut |
| 1 cup | jaggery |
| 2 tablespoons | ghee |
| 4 | cloves |
| 4 | green cardamom pods |
| 1 | cinnamon stick |
| 10 | cashew nuts |
| 10 | raisins |
| 2 cups | water |
| — | salt to taste |
Instructions
- 1 Wash and soak the basmati rice in water for 20 minutes, then drain.
- 2 Heat ghee in a pan and add cloves, cardamom pods, and cinnamon stick.
- 3 Add cashew nuts and raisins, sauté until the nuts turn golden brown.
- 4 Add the soaked and drained rice to the pan, sauté for 2-3 minutes.
- 5 Add 2 cups of water and a pinch of salt, bring to a boil.
- 6 Reduce the heat, cover, and cook the rice until it's almost done.
- 7 In another pan, melt jaggery with a little water to make a syrup.
- 8 Add grated coconut to the jaggery syrup and mix well.
- 9 Once the rice is cooked, add the coconut-jaggery mixture to it.
- 10 Gently mix everything together and cook for another 5-7 minutes.
- 11 Serve warm, garnished with additional nuts if desired.
Tips
For extra flavour, you can add a few strands of saffron soaked in warm milk to the rice.
