Ingredients

2 cups mandakki (puffed rice)
1 cup sev (fried gram flour noodles)
1 medium onion, finely chopped
1 medium tomato, finely chopped
2 tablespoons peanuts
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 pinch asafoetida
salt to taste
2 tablespoons coriander leaves, chopped
1 tablespoon lemon juice

Instructions

  1. 1 Heat oil in a pan and add mustard seeds. Allow them to splutter.
  2. 2 Add peanuts and fry until they turn golden brown.
  3. 3 Add finely chopped onions and sauté until they become translucent.
  4. 4 Stir in the chopped tomatoes and cook until they soften.
  5. 5 Add turmeric powder, red chili powder, asafoetida, and salt. Mix well.
  6. 6 Add the mandakki (puffed rice) and mix thoroughly so that it is coated with the spice mixture.
  7. 7 Cook for 2-3 minutes on low heat, stirring occasionally.
  8. 8 Turn off the heat and add sev, coriander leaves, and lemon juice. Mix well.
  9. 9 Serve immediately, garnished with additional sev and coriander leaves if desired.

Tips

For a spicier version, increase the amount of red chili powder or add finely chopped green chilies.
