Ingredients

1 cup sticky rice
1 cup grated coconut
1/2 cup jaggery
1 pinch salt
1 cup water

Instructions

  1. 1 Wash the sticky rice thoroughly and soak it in water for 4-5 hours or overnight.
  2. 2 Drain the soaked rice and grind it into a coarse paste using a little water.
  3. 3 In a pan, add the grated coconut and jaggery. Cook on low heat until the jaggery melts and combines with the coconut.
  4. 4 Add a pinch of salt to the coconut-jaggery mixture and mix well.
  5. 5 Combine the rice paste with the coconut-jaggery mixture, mixing thoroughly.
  6. 6 Grease a steamer plate or a shallow dish with a little oil.
  7. 7 Pour the mixture into the greased dish and spread it evenly.
  8. 8 Steam the mixture for about 30-40 minutes or until it sets and is cooked through.
  9. 9 Allow it to cool slightly before cutting into pieces and serving.

Tips

Ensure the rice paste is not too fine to maintain the traditional texture of Narikolor Sandah.
