Ingredients
| 1 cup | fresh grated coconut |
| 1 cup | jaggery |
| 1 teaspoon | cardamom powder |
| 1 cup | rice flour |
| 1 tablespoon | ghee |
| 1 pinch | salt |
| — | banana leaves for wrapping |
Instructions
- 1 In a pan, add the grated coconut and jaggery. Cook on low flame until the jaggery melts and blends well with the coconut.
- 2 Add cardamom powder to the coconut-jaggery mixture and mix well. Set aside to cool.
- 3 In a bowl, mix rice flour with a pinch of salt and enough water to form a smooth dough.
- 4 Divide the dough into small portions and flatten each portion into a small disc.
- 5 Place a spoonful of the coconut-jaggery mixture onto each disc and fold to seal the edges.
- 6 Cut banana leaves into squares and lightly heat them over a flame to make them pliable.
- 7 Place each filled disc on a banana leaf square and fold the leaf to wrap the disc completely.
- 8 Steam the wrapped discs in a steamer for about 20 minutes until cooked through.
- 9 Remove from the steamer and let them cool slightly before serving.
Tips
Ensure the banana leaves are pliable to avoid tearing while wrapping.
