Ingredients

1 cup fresh grated coconut
1 cup jaggery
1 teaspoon cardamom powder
1 cup rice flour
1 tablespoon ghee
1 pinch salt
banana leaves for wrapping

Instructions

  1. 1 In a pan, add the grated coconut and jaggery. Cook on low flame until the jaggery melts and blends well with the coconut.
  2. 2 Add cardamom powder to the coconut-jaggery mixture and mix well. Set aside to cool.
  3. 3 In a bowl, mix rice flour with a pinch of salt and enough water to form a smooth dough.
  4. 4 Divide the dough into small portions and flatten each portion into a small disc.
  5. 5 Place a spoonful of the coconut-jaggery mixture onto each disc and fold to seal the edges.
  6. 6 Cut banana leaves into squares and lightly heat them over a flame to make them pliable.
  7. 7 Place each filled disc on a banana leaf square and fold the leaf to wrap the disc completely.
  8. 8 Steam the wrapped discs in a steamer for about 20 minutes until cooked through.
  9. 9 Remove from the steamer and let them cool slightly before serving.

Tips

Ensure the banana leaves are pliable to avoid tearing while wrapping.
