Ingredients
| 1 cup | raw rice |
| 1 cup | jaggery |
| 1 tablespoon | ghee |
| 1 teaspoon | cardamom powder |
| 1 cup | water |
| — | oil for deep frying |
Instructions
- 1 Wash the rice thoroughly and soak it in water for at least 4 hours.
- 2 Drain the water and spread the rice on a clean cloth to dry for about 30 minutes.
- 3 Grind the dried rice into a fine powder using a mixer or grinder.
- 4 In a pan, add jaggery and water, and heat until the jaggery completely dissolves, forming a syrup.
- 5 Filter the syrup to remove any impurities.
- 6 Heat the syrup again and add the rice flour gradually, stirring continuously to avoid lumps.
- 7 Add ghee and cardamom powder to the mixture and cook until it forms a soft dough-like consistency.
- 8 Let the dough cool slightly and then divide it into small lemon-sized balls.
- 9 Flatten each ball into a disc shape using your palms.
- 10 Heat oil in a deep frying pan.
- 11 Deep fry each disc on medium heat until they turn golden brown.
- 12 Remove from oil and drain on paper towels.
Tips
Ensure the jaggery syrup reaches a soft ball consistency for the best texture.
