Ingredients

1 cup raw rice
1 cup jaggery
1 tablespoon ghee
1 teaspoon cardamom powder
1 cup water
oil for deep frying

Instructions

  1. 1 Wash the rice thoroughly and soak it in water for at least 4 hours.
  2. 2 Drain the water and spread the rice on a clean cloth to dry for about 30 minutes.
  3. 3 Grind the dried rice into a fine powder using a mixer or grinder.
  4. 4 In a pan, add jaggery and water, and heat until the jaggery completely dissolves, forming a syrup.
  5. 5 Filter the syrup to remove any impurities.
  6. 6 Heat the syrup again and add the rice flour gradually, stirring continuously to avoid lumps.
  7. 7 Add ghee and cardamom powder to the mixture and cook until it forms a soft dough-like consistency.
  8. 8 Let the dough cool slightly and then divide it into small lemon-sized balls.
  9. 9 Flatten each ball into a disc shape using your palms.
  10. 10 Heat oil in a deep frying pan.
  11. 11 Deep fry each disc on medium heat until they turn golden brown.
  12. 12 Remove from oil and drain on paper towels.

Tips

Ensure the jaggery syrup reaches a soft ball consistency for the best texture.
