Ingredients
| 1 cup | rice flour |
| 1 cup | water |
| 2 tablespoons | ghee |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | sesame seeds |
| 1 teaspoon | red chili powder |
| 1 teaspoon | salt |
| — | oil for deep frying |
Instructions
- 1 In a saucepan, bring 1 cup of water to a boil.
- 2 Add ghee, cumin seeds, sesame seeds, red chili powder, and salt to the boiling water.
- 3 Reduce the heat to low and add the rice flour gradually, stirring continuously to avoid lumps.
- 4 Cook the mixture until it forms a dough-like consistency and leaves the sides of the pan.
- 5 Remove from heat and let it cool slightly until it is comfortable to handle.
- 6 Knead the dough gently and divide it into small lemon-sized balls.
- 7 Grease a plastic sheet or banana leaf with a little oil.
- 8 Take a dough ball and flatten it on the greased sheet into a thin disc.
- 9 Heat oil in a deep frying pan over medium heat.
- 10 Carefully slide the flattened disc into the hot oil.
- 11 Fry until the chakinalu turn golden brown and crispy on both sides.
- 12 Remove from oil and drain on paper towels.
- 13 Repeat the process with the remaining dough balls.
Tips
Ensure the oil is hot enough before frying to get crispy chakinalu. Adjust the spice level by varying the amount of red chili powder.
