Ingredients

500 grams fresh spinach leaves
1 medium onion, finely chopped
2 cloves garlic, minced
1 inch ginger, grated
2 tablespoons ghee
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
salt to taste
1 tablespoon fresh lemon juice

Instructions

  1. 1 Wash the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes.
  2. 2 Drain the spinach and immediately transfer to cold water to retain the green color.
  3. 3 Once cooled, blend the spinach into a smooth puree and set aside.
  4. 4 Heat ghee in a pan over medium heat and add cumin seeds.
  5. 5 When the cumin seeds start to splutter, add the chopped onion and sauté until golden brown.
  6. 6 Add the minced garlic and grated ginger, and sauté for another minute.
  7. 7 Stir in the coriander powder, turmeric powder, and red chili powder, and cook for a few seconds.
  8. 8 Add the spinach puree to the pan and mix well with the spices.
  9. 9 Cook the mixture on low heat for about 10 minutes, stirring occasionally.
  10. 10 Add garam masala and salt to taste, and cook for another 2 minutes.
  11. 11 Finally, stir in the lemon juice and mix well before serving.

Tips

For a richer flavor, you can add a dollop of cream or a small amount of butter before serving.
