Ingredients
| 500 grams | fresh spinach leaves |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, grated |
| 2 tablespoons | ghee |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | coriander powder |
| 1/2 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | garam masala |
| — | salt to taste |
| 1 tablespoon | fresh lemon juice |
Instructions
- 1 Wash the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes.
- 2 Drain the spinach and immediately transfer to cold water to retain the green color.
- 3 Once cooled, blend the spinach into a smooth puree and set aside.
- 4 Heat ghee in a pan over medium heat and add cumin seeds.
- 5 When the cumin seeds start to splutter, add the chopped onion and sauté until golden brown.
- 6 Add the minced garlic and grated ginger, and sauté for another minute.
- 7 Stir in the coriander powder, turmeric powder, and red chili powder, and cook for a few seconds.
- 8 Add the spinach puree to the pan and mix well with the spices.
- 9 Cook the mixture on low heat for about 10 minutes, stirring occasionally.
- 10 Add garam masala and salt to taste, and cook for another 2 minutes.
- 11 Finally, stir in the lemon juice and mix well before serving.
Tips
For a richer flavor, you can add a dollop of cream or a small amount of butter before serving.
