Ingredients

1 cup plain yogurt
2 paan leaves
1 tablespoon sugar
1 teaspoon fennel seeds
1 teaspoon gulkand (rose petal preserve)
1/4 teaspoon cardamom powder
1/4 teaspoon salt
2 tablespoons pomegranate seeds
1 tablespoon chopped mint leaves

Instructions

  1. 1 Wash the paan leaves thoroughly and pat them dry.
  2. 2 Finely chop the paan leaves and set aside.
  3. 3 In a mixing bowl, whisk the yogurt until smooth.
  4. 4 Add sugar, fennel seeds, gulkand, cardamom powder, and salt to the yogurt and mix well.
  5. 5 Stir in the chopped paan leaves and mix until well combined.
  6. 6 Garnish the raita with pomegranate seeds and chopped mint leaves.
  7. 7 Chill the paan raita in the refrigerator for at least 15 minutes before serving.

Tips

For a more intense paan flavor, you can add a few drops of paan essence.
