Ingredients
| 1 cup | thick yogurt |
| 6-8 | green chilies |
| 1 tablespoon | oil |
| 1/2 teaspoon | mustard seeds |
| 1/2 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 | small piece of ginger |
| 1 sprig | curry leaves |
| to taste | salt |
Instructions
- 1 Wash the green chilies and pat them dry.
- 2 Slit the green chilies lengthwise, keeping them whole.
- 3 Heat oil in a pan over medium flame.
- 4 Add mustard seeds to the hot oil and allow them to splutter.
- 5 Add cumin seeds and asafoetida, sauté for a few seconds.
- 6 Add the slit green chilies and sauté until they are slightly blistered.
- 7 Grate or finely chop the ginger and add it to the pan.
- 8 Add curry leaves and sauté for a few more seconds.
- 9 Remove the pan from heat and let the mixture cool slightly.
- 10 In a bowl, whisk the yogurt until smooth.
- 11 Add the sautéed chili mixture to the yogurt.
- 12 Season with salt to taste and mix well.
- 13 Serve the Pachai Milagai Thayir Pachadi chilled or at room temperature.
Tips
Adjust the number of green chilies based on your spice preference. For a milder version, deseed the chilies before sautéing.
