Ingredients

1 cup thick yogurt
6-8 green chilies
1 tablespoon oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 pinch asafoetida
1 small piece of ginger
1 sprig curry leaves
to taste salt

Instructions

  1. 1 Wash the green chilies and pat them dry.
  2. 2 Slit the green chilies lengthwise, keeping them whole.
  3. 3 Heat oil in a pan over medium flame.
  4. 4 Add mustard seeds to the hot oil and allow them to splutter.
  5. 5 Add cumin seeds and asafoetida, sauté for a few seconds.
  6. 6 Add the slit green chilies and sauté until they are slightly blistered.
  7. 7 Grate or finely chop the ginger and add it to the pan.
  8. 8 Add curry leaves and sauté for a few more seconds.
  9. 9 Remove the pan from heat and let the mixture cool slightly.
  10. 10 In a bowl, whisk the yogurt until smooth.
  11. 11 Add the sautéed chili mixture to the yogurt.
  12. 12 Season with salt to taste and mix well.
  13. 13 Serve the Pachai Milagai Thayir Pachadi chilled or at room temperature.

Tips

Adjust the number of green chilies based on your spice preference. For a milder version, deseed the chilies before sautéing.
