Ingredients

1 tablespoon mustard oil
1 teaspoon panch phoron
1 cup potatoes, diced
1 cup cauliflower florets
1 cup eggplant, diced
1 cup pumpkin, diced
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon salt
1 cup water
1 tablespoon fresh coriander leaves, chopped

Instructions

  1. 1 Heat mustard oil in a pan over medium heat.
  2. 2 Add panch phoron and let it splutter for a few seconds.
  3. 3 Add diced potatoes and sauté for 5 minutes.
  4. 4 Add cauliflower florets, diced eggplant, and pumpkin to the pan.
  5. 5 Stir in turmeric powder, red chili powder, coriander powder, and salt.
  6. 6 Mix well and cook for another 5 minutes.
  7. 7 Add water, cover the pan, and let it simmer for 15-20 minutes or until the vegetables are cooked through.
  8. 8 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, fry the panch phoron in mustard oil until aromatic before adding the vegetables.
