Ingredients
| 1 tablespoon | mustard oil |
| 1 teaspoon | panch phoron |
| 1 cup | potatoes, diced |
| 1 cup | cauliflower florets |
| 1 cup | eggplant, diced |
| 1 cup | pumpkin, diced |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | salt |
| 1 cup | water |
| 1 tablespoon | fresh coriander leaves, chopped |
Instructions
- 1 Heat mustard oil in a pan over medium heat.
- 2 Add panch phoron and let it splutter for a few seconds.
- 3 Add diced potatoes and sauté for 5 minutes.
- 4 Add cauliflower florets, diced eggplant, and pumpkin to the pan.
- 5 Stir in turmeric powder, red chili powder, coriander powder, and salt.
- 6 Mix well and cook for another 5 minutes.
- 7 Add water, cover the pan, and let it simmer for 15-20 minutes or until the vegetables are cooked through.
- 8 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, fry the panch phoron in mustard oil until aromatic before adding the vegetables.
