Ingredients

1 cup heavy cream
1 cup whole milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 packet unflavored gelatin
2 tablespoons cold water
fresh berries for garnish (optional)

Instructions

  1. 1 In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.
  2. 2 In a saucepan, combine the heavy cream, whole milk, and granulated sugar.
  3. 3 Heat the mixture over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is hot but not boiling.
  4. 4 Remove the saucepan from the heat and stir in the vanilla extract.
  5. 5 Add the bloomed gelatin to the hot cream mixture and stir until the gelatin is completely dissolved.
  6. 6 Pour the mixture into ramekins or serving glasses and let them cool to room temperature.
  7. 7 Cover the ramekins with plastic wrap and refrigerate for at least 4 hours, or until set.
  8. 8 Before serving, garnish with fresh berries if desired.

Tips

For a smoother texture, strain the mixture through a fine mesh sieve before pouring into ramekins.
