Ingredients

1 cup vermicelli
2 tablespoons ghee
1/4 teaspoon cardamom powder
1/4 cup sugar
2 tablespoons raisins
2 tablespoons slivered almonds
1 1/2 cups water
pinch of saffron strands
salt to taste

Instructions

  1. 1 Heat ghee in a pan over medium heat.
  2. 2 Add the vermicelli and roast until golden brown, stirring continuously to avoid burning.
  3. 3 In a separate saucepan, bring water to a boil.
  4. 4 Add sugar, cardamom powder, saffron strands, and a pinch of salt to the boiling water.
  5. 5 Stir until the sugar dissolves completely.
  6. 6 Pour the sugar syrup over the roasted vermicelli.
  7. 7 Add raisins and slivered almonds.
  8. 8 Cover the pan and let it cook on low heat until the vermicelli absorbs all the liquid and becomes soft.
  9. 9 Fluff the sev gently with a fork before serving.

Tips

For a richer taste, you can add a few drops of rose water or kewra essence.
