Ingredients
| 200 grams | chicken, cut into small pieces |
| 1 cup | rice, soaked |
| 1 tablespoon | ginger, finely chopped |
| 1 tablespoon | garlic, finely chopped |
| 1 teaspoon | green chili, chopped |
| 1 teaspoon | bamboo shoot (fermented) |
| 1 cup | spinach leaves, chopped |
| 1 tablespoon | mustard oil |
| — | salt to taste |
| — | water as required |
Instructions
- 1 Heat mustard oil in a pot over medium heat.
- 2 Add ginger, garlic, and green chili, sauté until fragrant.
- 3 Add chicken pieces and cook until lightly browned.
- 4 Add fermented bamboo shoot and stir well.
- 5 Pour in enough water to cover the chicken and bring to a boil.
- 6 Add soaked rice and salt to taste, then reduce heat to simmer.
- 7 Cook until the rice is tender and the chicken is cooked through.
- 8 Stir in the chopped spinach leaves and simmer for another 5 minutes.
- 9 Adjust seasoning if necessary and serve hot.
Tips
For an authentic taste, use fresh bamboo shoot if available.
