Ingredients

200 grams chicken, cut into small pieces
1 cup rice, soaked
1 tablespoon ginger, finely chopped
1 tablespoon garlic, finely chopped
1 teaspoon green chili, chopped
1 teaspoon bamboo shoot (fermented)
1 cup spinach leaves, chopped
1 tablespoon mustard oil
salt to taste
water as required

Instructions

  1. 1 Heat mustard oil in a pot over medium heat.
  2. 2 Add ginger, garlic, and green chili, sauté until fragrant.
  3. 3 Add chicken pieces and cook until lightly browned.
  4. 4 Add fermented bamboo shoot and stir well.
  5. 5 Pour in enough water to cover the chicken and bring to a boil.
  6. 6 Add soaked rice and salt to taste, then reduce heat to simmer.
  7. 7 Cook until the rice is tender and the chicken is cooked through.
  8. 8 Stir in the chopped spinach leaves and simmer for another 5 minutes.
  9. 9 Adjust seasoning if necessary and serve hot.

Tips

For an authentic taste, use fresh bamboo shoot if available.
