2 tablespoons | Olive oil |

1 teaspoon | Smoked paprika |
|
1 teaspoon | Paprika , sweet |

1 pinch | Cayenne pepper |
|
1 clove | Garlic , minced |
|
1 cup | Tomato Puree , canned |
|
1 tablespoon | Vinegar , red wine |
|
1/4 cup | Mayonnaise |
|
1 tablespoon | Lemon juice |
|
1 tablespoon | Parsley , chopped fresh |
Instructions
- 1 Peel the potatoes and cut them into bite-sized cubes.
- 2 Heat olive oil in a large frying pan over medium heat.
- 3 Add the potatoes to the pan and fry until golden and crispy, about 15-20 minutes.
- 4 Remove the potatoes from the pan and drain on paper towels. Season with salt and pepper.
- 5 In the same pan, add a little more olive oil if needed, and sauté the minced garlic until fragrant.
- 6 Add the smoked paprika, sweet paprika, and cayenne pepper, stirring for about 30 seconds.
- 7 Pour in the tomato puree and red wine vinegar, and let the sauce simmer for about 10 minutes until thickened.
- 8 Season the sauce with salt and pepper to taste.
- 9 In a small bowl, mix mayonnaise with lemon juice to make the aioli.
- 10 Serve the potatoes drizzled with the tomato sauce and aioli, and garnish with chopped parsley.
Tips
For a spicier kick, increase the amount of cayenne pepper. You can also bake the potatoes for a healthier version.
