Ingredients

Potato 3 medium Potato , peeled and cubed
olive oil 2 tablespoons Olive oil
smoked paprika 1 teaspoon Smoked paprika
paprika 1 teaspoon Paprika , sweet
cayenne pepper 1 pinch Cayenne pepper
Garlic 1 clove Garlic , minced
Tomato Puree 1 cup Tomato Puree , canned
vinegar 1 tablespoon Vinegar , red wine
mayonnaise 1/4 cup Mayonnaise
lemon juice 1 tablespoon Lemon juice
Parsley 1 tablespoon Parsley , chopped fresh

Instructions

  1. 1 Peel the potatoes and cut them into bite-sized cubes.
  2. 2 Heat olive oil in a large frying pan over medium heat.
  3. 3 Add the potatoes to the pan and fry until golden and crispy, about 15-20 minutes.
  4. 4 Remove the potatoes from the pan and drain on paper towels. Season with salt and pepper.
  5. 5 In the same pan, add a little more olive oil if needed, and sauté the minced garlic until fragrant.
  6. 6 Add the smoked paprika, sweet paprika, and cayenne pepper, stirring for about 30 seconds.
  7. 7 Pour in the tomato puree and red wine vinegar, and let the sauce simmer for about 10 minutes until thickened.
  8. 8 Season the sauce with salt and pepper to taste.
  9. 9 In a small bowl, mix mayonnaise with lemon juice to make the aioli.
  10. 10 Serve the potatoes drizzled with the tomato sauce and aioli, and garnish with chopped parsley.

Tips

For a spicier kick, increase the amount of cayenne pepper. You can also bake the potatoes for a healthier version.
