Ingredients
| 1 cup | rice flour |
| 1 cup | water |
| 1 teaspoon | oil |
| — | salt to taste |
Instructions
- 1 In a saucepan, bring 1 cup of water to a boil with a pinch of salt and 1 teaspoon of oil.
- 2 Reduce the heat to low and gradually add the rice flour, stirring continuously to avoid lumps.
- 3 Cook the mixture for 2-3 minutes until it forms a smooth dough.
- 4 Remove the dough from heat and let it cool slightly until it is comfortable to handle.
- 5 Knead the dough well until it becomes smooth and pliable.
- 6 Divide the dough into small lemon-sized balls.
- 7 Roll each ball into a thin disc using a rolling pin, dusting with rice flour to prevent sticking.
- 8 Heat a tawa or non-stick pan over medium heat.
- 9 Place the rolled pathiri on the hot tawa and cook for about 1-2 minutes on each side until small brown spots appear.
- 10 Remove from the tawa and repeat with the remaining dough balls.
- 11 Serve warm with curry or any side dish of your choice.
Tips
Ensure the dough is smooth and without cracks to get soft pathiris.
