Ingredients

1 cup rice flour
1 cup water
1 teaspoon oil
salt to taste

Instructions

  1. 1 In a saucepan, bring 1 cup of water to a boil with a pinch of salt and 1 teaspoon of oil.
  2. 2 Reduce the heat to low and gradually add the rice flour, stirring continuously to avoid lumps.
  3. 3 Cook the mixture for 2-3 minutes until it forms a smooth dough.
  4. 4 Remove the dough from heat and let it cool slightly until it is comfortable to handle.
  5. 5 Knead the dough well until it becomes smooth and pliable.
  6. 6 Divide the dough into small lemon-sized balls.
  7. 7 Roll each ball into a thin disc using a rolling pin, dusting with rice flour to prevent sticking.
  8. 8 Heat a tawa or non-stick pan over medium heat.
  9. 9 Place the rolled pathiri on the hot tawa and cook for about 1-2 minutes on each side until small brown spots appear.
  10. 10 Remove from the tawa and repeat with the remaining dough balls.
  11. 11 Serve warm with curry or any side dish of your choice.

Tips

Ensure the dough is smooth and without cracks to get soft pathiris.
