Ingredients
| 1 cup | rice flour |
| 1 cup | freshly grated coconut |
| 1 cup | jaggery |
| 1 teaspoon | cardamom powder |
| 1 | salt to taste |
| 6-8 | turmeric leaves |
| 1/2 cup | water |
Instructions
- 1 Mix the rice flour with a pinch of salt and water to form a smooth, spreadable batter.
- 2 In a pan, melt the jaggery with a little water until it forms a syrup.
- 3 Add the grated coconut and cardamom powder to the jaggery syrup and cook until the mixture thickens slightly.
- 4 Clean the turmeric leaves and pat them dry.
- 5 Spread a thin layer of the rice flour batter on each turmeric leaf.
- 6 Place a spoonful of the coconut-jaggery filling on one side of the leaf.
- 7 Fold the leaf over to cover the filling and press gently.
- 8 Steam the folded leaves in a steamer for about 20-25 minutes.
- 9 Once cooked, remove from the steamer and let them cool slightly before serving.
Tips
For enhanced aroma, ensure the turmeric leaves are fresh and tender.
