Ingredients
| 250 grams | green beans (payar) |
| 2 tablespoons | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 2 cloves | garlic, sliced |
| 5-6 | shallots, sliced |
| 2 | dry red chilies |
| — | salt to taste |
| 1 sprig | curry leaves |
Instructions
- 1 Wash the green beans thoroughly and cut them into 1-inch pieces.
- 2 Heat coconut oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add sliced garlic, shallots, and dry red chilies. Sauté until the shallots turn golden brown.
- 5 Add the turmeric powder and red chili powder. Stir well for a few seconds.
- 6 Add the cut green beans and salt to taste. Mix everything well.
- 7 Cover and cook on low heat for about 10-12 minutes, stirring occasionally, until the beans are tender.
- 8 Add curry leaves and sauté for another 2-3 minutes.
- 9 Remove from heat and serve hot.
Tips
For a smoky flavor, add a pinch of asafoetida along with the spices.
