Ingredients

250 grams green beans (payar)
2 tablespoons coconut oil
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 cloves garlic, sliced
5-6 shallots, sliced
2 dry red chilies
salt to taste
1 sprig curry leaves

Instructions

  1. 1 Wash the green beans thoroughly and cut them into 1-inch pieces.
  2. 2 Heat coconut oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add sliced garlic, shallots, and dry red chilies. Sauté until the shallots turn golden brown.
  5. 5 Add the turmeric powder and red chili powder. Stir well for a few seconds.
  6. 6 Add the cut green beans and salt to taste. Mix everything well.
  7. 7 Cover and cook on low heat for about 10-12 minutes, stirring occasionally, until the beans are tender.
  8. 8 Add curry leaves and sauté for another 2-3 minutes.
  9. 9 Remove from heat and serve hot.

Tips

For a smoky flavor, add a pinch of asafoetida along with the spices.
