Ingredients

1 liter | Milk , full-fat |

1/4 cup | Basmati rice |
|
1/2 cup | Sugar |
|
1/4 teaspoon | Cardamom , powder |

2 tablespoons | Cashew , chopped |
|
2 tablespoons | Raisin |

1 tablespoon | Ghee |
|
10 | Saffron , strands |

Instructions
- 1 Wash the basmati rice thoroughly under running water and soak it for 30 minutes.
- 2 In a heavy-bottomed pan, bring the milk to a boil, then reduce the heat to a simmer.
- 3 Drain the soaked rice and add it to the simmering milk.
- 4 Cook the rice in the milk on low heat, stirring occasionally to prevent sticking, until the rice is soft and the milk has reduced and thickened.
- 5 Add sugar and a pinch of salt to the mixture, stirring until the sugar dissolves completely.
- 6 Stir in the cardamom powder and saffron strands, mixing well.
- 7 In a small pan, heat ghee and fry the cashews and raisins until golden brown, then add them to the rice mixture.
- 8 Cook for an additional 5 minutes, stirring gently.
- 9 Remove from heat and let it cool slightly before serving.
Tips
For a richer taste, you can use condensed milk instead of regular milk.
