Ingredients

1 liter full-fat milk
1/4 cup basmati rice
1/2 cup sugar
1/4 teaspoon cardamom powder
2 tablespoons chopped cashews
2 tablespoons raisins
1 tablespoon ghee
10 saffron strands
pinch of salt

Instructions

  1. 1 Wash the basmati rice thoroughly under running water and soak it for 30 minutes.
  2. 2 In a heavy-bottomed pan, bring the milk to a boil, then reduce the heat to a simmer.
  3. 3 Drain the soaked rice and add it to the simmering milk.
  4. 4 Cook the rice in the milk on low heat, stirring occasionally to prevent sticking, until the rice is soft and the milk has reduced and thickened.
  5. 5 Add sugar and a pinch of salt to the mixture, stirring until the sugar dissolves completely.
  6. 6 Stir in the cardamom powder and saffron strands, mixing well.
  7. 7 In a small pan, heat ghee and fry the cashews and raisins until golden brown, then add them to the rice mixture.
  8. 8 Cook for an additional 5 minutes, stirring gently.
  9. 9 Remove from heat and let it cool slightly before serving.

Tips

For a richer taste, you can use condensed milk instead of regular milk.
