Ingredients
| 3 | ripe bananas (preferably Nendran variety) |
| 1/2 cup | grated coconut |
| 1/4 cup | jaggery, grated |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | cashew nuts |
| 2 tablespoons | raisins |
| 1 tablespoon | ghee |
| — | oil for deep frying |
Instructions
- 1 Peel the bananas and make a slit lengthwise without cutting through completely.
- 2 In a pan, heat ghee and fry the cashew nuts and raisins until golden brown. Remove and set aside.
- 3 In the same pan, add grated coconut and grated jaggery. Cook until the mixture thickens slightly.
- 4 Add cardamom powder, fried cashew nuts, and raisins to the coconut-jaggery mixture. Mix well and remove from heat.
- 5 Stuff the bananas with the prepared coconut-jaggery mixture.
- 6 Heat oil in a deep frying pan. Once hot, carefully place the stuffed bananas in the oil.
- 7 Fry the bananas on medium heat until they are golden brown and crispy on the outside.
- 8 Remove from oil and drain excess oil on paper towels.
Tips
Use ripe but firm bananas for the best texture and taste.
