Ingredients

3 ripe bananas (preferably Nendran variety)
1/2 cup grated coconut
1/4 cup jaggery, grated
1/4 teaspoon cardamom powder
2 tablespoons cashew nuts
2 tablespoons raisins
1 tablespoon ghee
oil for deep frying

Instructions

  1. 1 Peel the bananas and make a slit lengthwise without cutting through completely.
  2. 2 In a pan, heat ghee and fry the cashew nuts and raisins until golden brown. Remove and set aside.
  3. 3 In the same pan, add grated coconut and grated jaggery. Cook until the mixture thickens slightly.
  4. 4 Add cardamom powder, fried cashew nuts, and raisins to the coconut-jaggery mixture. Mix well and remove from heat.
  5. 5 Stuff the bananas with the prepared coconut-jaggery mixture.
  6. 6 Heat oil in a deep frying pan. Once hot, carefully place the stuffed bananas in the oil.
  7. 7 Fry the bananas on medium heat until they are golden brown and crispy on the outside.
  8. 8 Remove from oil and drain excess oil on paper towels.

Tips

Use ripe but firm bananas for the best texture and taste.
