Ingredients
| 1/4 cup | yellow moong dal (pesarapappu) |
| 2 cups | water |
| 1/2 cup | jaggery |
| 1 cup | coconut milk |
| 1 tablespoon | ghee |
| 1/4 teaspoon | cardamom powder |
| 8-10 | cashew nuts |
| 8-10 | raisins |
| 1 pinch | salt |
Instructions
- 1 Dry roast the yellow moong dal in a pan until it turns light golden and aromatic.
- 2 Rinse the roasted moong dal under running water and drain.
- 3 In a saucepan, add the rinsed moong dal and 2 cups of water. Cook until the dal is soft and mushy.
- 4 Add jaggery to the cooked dal and stir until it dissolves completely.
- 5 Pour in the coconut milk and mix well. Allow it to simmer for a few minutes.
- 6 In a separate small pan, heat ghee and fry the cashew nuts until golden brown. Remove and set aside.
- 7 In the same ghee, fry the raisins until they puff up. Remove and set aside.
- 8 Add cardamom powder and a pinch of salt to the payasam. Stir well.
- 9 Garnish the payasam with fried cashew nuts and raisins before serving.
Tips
For a richer taste, you can use full-fat coconut milk.
