1/2 cup | Yellow Moong Dal |

1 medium | Onion , finely chopped |

1 medium | Tomato , finely chopped |

2 cups | Tamarind , water |
|
2 tablespoons | Oil |
|
1 teaspoon | Mustard Seed |
|
1 teaspoon | Cumin , seeds |
|
2 cloves | Garlic , crushed |
|
2 whole | Red Chili , dried |
|
1 pinch | Asafoetida |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 teaspoon | Jaggery |
|
— | Salt , to taste |

1 handful | Curry Leaf |
|
2 tablespoons | Cilantro , chopped |
Instructions
- 1 Wash the yellow moong dal thoroughly and soak it in water for 15 minutes.
- 2 Heat oil in a pan over medium heat and add mustard seeds and cumin seeds.
- 3 Once they splutter, add crushed garlic, dried red chilies, and asafoetida.
- 4 Add chopped onions and sauté until they turn translucent.
- 5 Add chopped tomatoes and cook until they soften.
- 6 Drain the soaked moong dal and add it to the pan.
- 7 Pour in the tamarind water and mix well.
- 8 Add turmeric powder, red chili powder, jaggery, and salt to taste.
- 9 Bring the mixture to a boil, then reduce the heat and let it simmer until the dal is cooked and the flavors meld together.
- 10 Add curry leaves and let it simmer for another 2-3 minutes.
- 11 Garnish with fresh coriander leaves before serving.
Tips
Adjust the consistency by adding water if needed. Serve with hot rice for a comforting meal.
