Ingredients

1 cup green gram (moong dal)
2 tablespoons rice
1 inch ginger
2 units green chilies
1 teaspoon cumin seeds
to taste salt
1 unit onion, finely chopped
2 tablespoons oil or ghee
1/4 cup coriander leaves, chopped
optional chopped green chilies

Instructions

  1. 1 Rinse the green gram and rice together under running water until the water runs clear.
  2. 2 Soak the green gram and rice in enough water for at least 4 hours or overnight.
  3. 3 Drain the soaked green gram and rice, and transfer them to a blender.
  4. 4 Add ginger, green chilies, cumin seeds, and salt to the blender.
  5. 5 Blend the mixture into a smooth batter, adding water as needed to achieve a pouring consistency.
  6. 6 Heat a non-stick pan or griddle over medium heat and lightly grease it with oil or ghee.
  7. 7 Pour a ladleful of batter onto the center of the pan and spread it outwards in a circular motion to form a thin dosa.
  8. 8 Drizzle a little oil or ghee around the edges and on top of the dosa.
  9. 9 Sprinkle chopped onions, coriander leaves, and optional green chilies over the dosa.
  10. 10 Cook until the edges start to lift and the bottom turns golden brown.
  11. 11 Flip the dosa and cook for another minute, if desired, for extra crispness.
  12. 12 Serve hot with coconut chutney or ginger chutney.

Tips

For a spicier version, increase the number of green chilies in the batter.
