Ingredients

| 1 cup | besan (gram flour) |
| 1 teaspoon | nigella seeds (kalonji) |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | salt |
| 1 teaspoon | sugar |
| 1 tablespoon | rice flour |
| 1 cup | water |
| — | oil for deep frying |
Instructions
- 1 Peel and thinly slice the onions, separating the layers.
- 2 In a mixing bowl, combine besan, nigella seeds, turmeric powder, red chili powder, salt, sugar, and rice flour.
- 3 Gradually add water to the dry ingredients to form a thick batter.
- 4 Add the sliced onions into the batter and mix well until the onions are well coated.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Once the oil is hot, drop spoonfuls of the onion batter into the oil.
- 7 Fry the peyaji until they are golden brown and crispy, turning occasionally.
- 8 Remove the peyaji from the oil and drain on paper towels to remove excess oil.
- 9 Serve hot with a side of green chutney or ketchup.
Tips
Ensure the oil is hot enough before frying to get crispy peyaji. You can add chopped green chilies to the batter for extra spice.
