Ingredients

250 grams pork belly
1 tablespoon mustard oil
1 teaspoon salt
1 teaspoon turmeric powder
2 cups water
1 large tomato, chopped
1 green chili, slit
1 ginger, 1-inch piece, sliced
2 cloves garlic, sliced
1 bunch spinach or local greens, roughly chopped

Instructions

  1. 1 Cut the pork belly into medium-sized pieces.
  2. 2 Heat mustard oil in a pot over medium heat.
  3. 3 Add the pork pieces and sauté until they start to brown.
  4. 4 Add salt and turmeric powder, stirring to coat the pork evenly.
  5. 5 Pour in the water and bring it to a boil.
  6. 6 Add the chopped tomato, green chili, ginger, and garlic to the pot.
  7. 7 Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the pork is tender.
  8. 8 Add the chopped spinach or local greens to the pot.
  9. 9 Cook for another 5-10 minutes until the greens are wilted and tender.
  10. 10 Adjust seasoning with more salt if necessary and serve hot.

Tips

For a smokier flavor, you can char the pork slightly before adding water.
