Ingredients
| 250 grams | pork belly |
| 1 tablespoon | mustard oil |
| 1 teaspoon | salt |
| 1 teaspoon | turmeric powder |
| 2 cups | water |
| 1 | large tomato, chopped |
| 1 | green chili, slit |
| 1 | ginger, 1-inch piece, sliced |
| 2 cloves | garlic, sliced |
| 1 bunch | spinach or local greens, roughly chopped |
Instructions
- 1 Cut the pork belly into medium-sized pieces.
- 2 Heat mustard oil in a pot over medium heat.
- 3 Add the pork pieces and sauté until they start to brown.
- 4 Add salt and turmeric powder, stirring to coat the pork evenly.
- 5 Pour in the water and bring it to a boil.
- 6 Add the chopped tomato, green chili, ginger, and garlic to the pot.
- 7 Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the pork is tender.
- 8 Add the chopped spinach or local greens to the pot.
- 9 Cook for another 5-10 minutes until the greens are wilted and tender.
- 10 Adjust seasoning with more salt if necessary and serve hot.
Tips
For a smokier flavor, you can char the pork slightly before adding water.
