Ingredients

1 pound beef bones
1 pound beef brisket
1 large onion
1 piece ginger
2 tablespoons fish sauce
1 tablespoon salt
1 tablespoon sugar
1 piece cinnamon stick
3 star anise
4 cloves
1 pound rice noodles
1 pound sirloin steak, thinly sliced
1 bunch fresh cilantro
1 bunch fresh basil
1 bunch fresh mint
2 limes, cut into wedges
2 green onions, sliced
1 cup bean sprouts
hoisin sauce, to taste
sriracha sauce, to taste

Instructions

  1. 1 Char the onion and ginger over an open flame or in a broiler until blackened, then rinse and set aside.
  2. 2 In a large pot, add beef bones and brisket, cover with water, and bring to a boil. Simmer for 10 minutes, then drain and rinse the bones and meat to remove impurities.
  3. 3 Refill the pot with 4 quarts of water, add the rinsed bones and brisket, charred onion, ginger, fish sauce, salt, sugar, cinnamon, star anise, and cloves.
  4. 4 Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, skimming off any foam.
  5. 5 Remove the brisket after 1 hour, let it cool, and then slice thinly.
  6. 6 Soak the rice noodles in warm water for 30 minutes, then drain.
  7. 7 Strain the broth, discarding the solids, and return the broth to the pot. Adjust seasoning if necessary.
  8. 8 Bring a pot of water to a boil and cook the noodles for 1-2 minutes until tender, then drain.
  9. 9 Divide the noodles among serving bowls, top with sliced brisket and raw sirloin.
  10. 10 Ladle hot broth over the top to cook the raw beef.
  11. 11 Garnish with cilantro, basil, mint, green onions, and bean sprouts.
  12. 12 Serve with lime wedges, hoisin sauce, and sriracha sauce on the side.

Tips

For a clearer broth, regularly skim off impurities while simmering. Adjust the amount of fish sauce and sugar to taste for a perfect balance.
