Ingredients

4 medium-sized taro roots (pinalu)
2 tablespoons mustard oil
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 green chili, chopped
1 medium onion, finely chopped
2 tomatoes, finely chopped
2 cups water
salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Wash the taro roots thoroughly and boil them in water until tender, about 15-20 minutes.
  2. 2 Peel the boiled taro roots and cut them into bite-sized pieces.
  3. 3 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
  4. 4 Add cumin seeds and let them splutter.
  5. 5 Add chopped onions and sauté until golden brown.
  6. 6 Stir in the chopped green chili and tomatoes, cooking until the tomatoes are soft.
  7. 7 Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  8. 8 Add the taro pieces to the pan and stir to coat them with the spices.
  9. 9 Pour in the water and bring the mixture to a boil.
  10. 10 Reduce the heat and let it simmer for about 10-15 minutes until the taro absorbs the flavors.
  11. 11 Sprinkle garam masala and garnish with fresh coriander leaves before serving.

Tips

For a smokier flavor, you can roast the taro roots over an open flame before boiling.
