| 4 | medium-sized taro roots (pinalu) |
| 2 tablespoons | mustard oil |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| 1 | green chili, chopped |
| 1 | medium onion, finely chopped |
| 2 | tomatoes, finely chopped |
| 2 cups | water |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Wash the taro roots thoroughly and boil them in water until tender, about 15-20 minutes.
- 2 Peel the boiled taro roots and cut them into bite-sized pieces.
- 3 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
- 4 Add cumin seeds and let them splutter.
- 5 Add chopped onions and sauté until golden brown.
- 6 Stir in the chopped green chili and tomatoes, cooking until the tomatoes are soft.
- 7 Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- 8 Add the taro pieces to the pan and stir to coat them with the spices.
- 9 Pour in the water and bring the mixture to a boil.
- 10 Reduce the heat and let it simmer for about 10-15 minutes until the taro absorbs the flavors.
- 11 Sprinkle garam masala and garnish with fresh coriander leaves before serving.
Tips
For a smokier flavor, you can roast the taro roots over an open flame before boiling.
