Ingredients

1 cup rice flour
1 cup grated coconut
1 cup jaggery
1 cup milk
1 tablespoon ghee
1 teaspoon cardamom powder
water as needed
salt to taste

Instructions

  1. 1 In a pan, heat the ghee and add the grated coconut.
  2. 2 Stir in the jaggery and cook until the mixture thickens slightly.
  3. 3 Add cardamom powder and mix well. Set aside to cool.
  4. 4 In a large bowl, combine rice flour, salt, and enough water to form a smooth dough.
  5. 5 Divide the dough into small balls and flatten them into discs.
  6. 6 Place a spoonful of coconut filling in the center of each disc and fold the edges to seal.
  7. 7 Steam the pithe in a steamer for about 15-20 minutes.
  8. 8 In another pan, heat the milk until it comes to a boil.
  9. 9 Add the steamed pithe to the milk and simmer for 5-10 minutes.
  10. 10 Serve warm.

Ensure the dough is not too sticky or too dry for easy handling.
