Ingredients

1 cup | Rice flour |

1 cup | Coconut , grated |
|
1 cup | Jaggery |
|
1 cup | Milk , full-fat |
|
1 tablespoon | Ghee |
|
1 teaspoon | Cardamom , powder |
|
— | Water , as needed |
|
— | Salt , to taste |
Instructions
- 1 In a pan, heat the ghee and add the grated coconut.
- 2 Stir in the jaggery and cook until the mixture thickens slightly.
- 3 Add cardamom powder and mix well. Set aside to cool.
- 4 In a large bowl, combine rice flour, salt, and enough water to form a smooth dough.
- 5 Divide the dough into small balls and flatten them into discs.
- 6 Place a spoonful of coconut filling in the center of each disc and fold the edges to seal.
- 7 Steam the pithe in a steamer for about 15-20 minutes.
- 8 In another pan, heat the milk until it comes to a boil.
- 9 Add the steamed pithe to the milk and simmer for 5-10 minutes.
- 10 Serve warm.

Ensure the dough is not too sticky or too dry for easy handling.
