Ingredients

1 cup besan (gram flour)
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
8-10 curry leaves
2 cups water
1 medium onion, finely chopped
2 green chilies, finely chopped
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon salt to taste
2 tablespoons fresh coriander leaves, chopped

Instructions

  1. 1 Heat oil in a pan over medium heat.
  2. 2 Add mustard seeds and let them splutter.
  3. 3 Add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
  4. 4 Add chopped onions and green chilies. Sauté until the onions turn translucent.
  5. 5 In a bowl, mix besan with water to make a smooth batter without lumps.
  6. 6 Add turmeric powder, red chili powder, and salt to the batter and mix well.
  7. 7 Pour the besan batter into the pan, stirring continuously to avoid lumps.
  8. 8 Cook on low heat, stirring occasionally, until the mixture thickens and the raw smell of besan disappears.
  9. 9 Garnish with chopped coriander leaves and serve hot.

Tips

Serve Pithla with bhakri or steamed rice for an authentic experience.
