Ingredients
| 1 cup | besan (gram flour) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 8-10 | curry leaves |
| 2 cups | water |
| 1 medium | onion, finely chopped |
| 2 | green chilies, finely chopped |
| 1/2 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Heat oil in a pan over medium heat.
- 2 Add mustard seeds and let them splutter.
- 3 Add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
- 4 Add chopped onions and green chilies. Sauté until the onions turn translucent.
- 5 In a bowl, mix besan with water to make a smooth batter without lumps.
- 6 Add turmeric powder, red chili powder, and salt to the batter and mix well.
- 7 Pour the besan batter into the pan, stirring continuously to avoid lumps.
- 8 Cook on low heat, stirring occasionally, until the mixture thickens and the raw smell of besan disappears.
- 9 Garnish with chopped coriander leaves and serve hot.
Tips
Serve Pithla with bhakri or steamed rice for an authentic experience.
