Ingredients
| 2 medium | onions |
| 1 tablespoon | coconut oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 2 tablespoons | freshly grated coconut |
| 2 to 3 | dried red chilies |
| 1 pinch | asafoetida |
| 1 small | tamarind piece |
| 1 | salt to taste |
| 1 handful | coriander leaves |
Instructions
- 1 Peel and finely chop the onions.
- 2 Heat coconut oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add urad dal and fry until golden brown.
- 5 Add dried red chilies and fry for a few seconds until they puff up.
- 6 Add asafoetida and mix well.
- 7 Add the chopped onions and sauté until they turn translucent.
- 8 Add freshly grated coconut and sauté for another 2 minutes.
- 9 Remove from heat and let the mixture cool slightly.
- 10 Transfer the mixture to a blender, add tamarind and salt, and grind to a coarse paste. Add a little water if necessary.
- 11 Garnish with chopped coriander leaves before serving.
Tips
For a spicier chutney, increase the number of dried red chilies.
