Ingredients

2 medium onions
1 tablespoon coconut oil
1 teaspoon mustard seeds
1 teaspoon urad dal
2 tablespoons freshly grated coconut
2 to 3 dried red chilies
1 pinch asafoetida
1 small tamarind piece
1 salt to taste
1 handful coriander leaves

Instructions

  1. 1 Peel and finely chop the onions.
  2. 2 Heat coconut oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add urad dal and fry until golden brown.
  5. 5 Add dried red chilies and fry for a few seconds until they puff up.
  6. 6 Add asafoetida and mix well.
  7. 7 Add the chopped onions and sauté until they turn translucent.
  8. 8 Add freshly grated coconut and sauté for another 2 minutes.
  9. 9 Remove from heat and let the mixture cool slightly.
  10. 10 Transfer the mixture to a blender, add tamarind and salt, and grind to a coarse paste. Add a little water if necessary.
  11. 11 Garnish with chopped coriander leaves before serving.

Tips

For a spicier chutney, increase the number of dried red chilies.
