Ingredients
| 1 cup | rice |
| 1/2 cup | urad dal |
| 1 cup | jaggery |
| 1 cup | grated coconut |
| 1 teaspoon | cardamom powder |
| 1/2 teaspoon | salt |
| 2 tablespoons | ghee |
| 1 cup | water |
| 1/2 cup | chopped cashew nuts |
| 1/2 cup | raisins |
| 1 | banana leaf |
Instructions
- 1 Wash and soak the rice and urad dal separately for 4-5 hours.
- 2 Drain the water and grind the rice and urad dal together to form a smooth batter.
- 3 In a pan, melt the jaggery with a little water to form a syrup. Strain to remove impurities.
- 4 Mix the jaggery syrup into the batter along with grated coconut, cardamom powder, and salt.
- 5 Heat ghee in a pan and fry the cashew nuts and raisins until golden. Add them to the batter.
- 6 Grease a banana leaf with ghee and pour the batter onto it, folding the leaf to cover the batter.
- 7 Place the wrapped batter in a steamer and steam for about 40 minutes or until cooked through.
- 8 Allow the Poda Pitha to cool slightly before slicing and serving.
Tips
For a more authentic flavor, use freshly grated coconut and good quality jaggery.
