Ingredients

1 cup rice
1/2 cup urad dal
1 cup jaggery
1 cup grated coconut
1 teaspoon cardamom powder
1/2 teaspoon salt
2 tablespoons ghee
1 cup water
1/2 cup chopped cashew nuts
1/2 cup raisins
1 banana leaf

Instructions

  1. 1 Wash and soak the rice and urad dal separately for 4-5 hours.
  2. 2 Drain the water and grind the rice and urad dal together to form a smooth batter.
  3. 3 In a pan, melt the jaggery with a little water to form a syrup. Strain to remove impurities.
  4. 4 Mix the jaggery syrup into the batter along with grated coconut, cardamom powder, and salt.
  5. 5 Heat ghee in a pan and fry the cashew nuts and raisins until golden. Add them to the batter.
  6. 6 Grease a banana leaf with ghee and pour the batter onto it, folding the leaf to cover the batter.
  7. 7 Place the wrapped batter in a steamer and steam for about 40 minutes or until cooked through.
  8. 8 Allow the Poda Pitha to cool slightly before slicing and serving.

Tips

For a more authentic flavor, use freshly grated coconut and good quality jaggery.
