Ingredients

1 cup raw rice
1 cup sugar
1 cup ghee
1 cup water
1 tablespoon cardamom powder

Instructions

  1. 1 Wash the raw rice thoroughly and soak it in water for about 2 hours.
  2. 2 Drain the water and grind the soaked rice into a very fine batter using minimal water.
  3. 3 Heat a non-stick pan and pour a small amount of the rice batter to make a thin crepe-like sheet. Cook on low heat until the sheet is dry and translucent.
  4. 4 Carefully remove the sheet from the pan and set aside. Repeat until all the batter is used.
  5. 5 In a bowl, mix sugar and cardamom powder.
  6. 6 Take one rice sheet, spread a thin layer of ghee over it, and sprinkle the sugar-cardamom mixture evenly.
  7. 7 Fold the sheet from both sides to form a rectangular shape, and then roll it tightly.
  8. 8 Repeat the process with the remaining sheets.
  9. 9 Serve the pootharekulu as a sweet snack or dessert.

Tips

Ensure the rice sheets are very thin and translucent for the best texture.
