1 teaspoon | Ginger , paste |

1 teaspoon | Garlic , paste |

1 cup | Onion , finely chopped |
|
1 cup | Tomato , finely chopped |

2 cups | Water |

2 pieces | Bay Leaf |

1 stick | Cinnamon |
|
2 pieces | Cardamom , green |

4 pieces | Clove |

Instructions
- 1 Cut the pork into small cubes and wash thoroughly.
- 2 Heat mustard oil in a pan until it starts smoking.
- 3 Add bay leaves, cinnamon, cardamom, and cloves to the oil and sauté for a few seconds.
- 4 Add the chopped onions and sauté until golden brown.
- 5 Add ginger and garlic paste, and sauté until the raw smell disappears.
- 6 Add chopped tomatoes and cook until they are soft and oil starts separating.
- 7 Mix in turmeric powder, red chili powder, cumin powder, coriander powder, and salt.
- 8 Add the pork pieces and sauté on high heat for about 5-7 minutes.
- 9 Pour in water, cover, and let it simmer on low heat until the pork is tender and cooked through.
- 10 Garnish with fresh coriander leaves and serve hot.
Tips
For a richer flavor, marinate the pork with the spices for 30 minutes before cooking.
