Ingredients

2 cups rice flour
1 cup water
1 pinch salt
1 tsp baking soda
1 tsp sugar

Instructions

  1. 1 In a mixing bowl, combine the rice flour, salt, baking soda, and sugar.
  2. 2 Gradually add water to the dry ingredients while stirring continuously to form a smooth batter.
  3. 3 Allow the batter to rest for 10 minutes.
  4. 4 Heat a flat pan or griddle over medium heat.
  5. 5 Grease the pan lightly with oil or ghee.
  6. 6 Pour a ladleful of batter onto the pan and spread it gently to form a small pancake.
  7. 7 Cover the pan with a lid and let it cook for about 3-4 minutes until the surface is cooked and the edges start to lift.
  8. 8 Remove the lid and flip the putharo to cook the other side for another 2-3 minutes.
  9. 9 Repeat the process with the remaining batter.

Tips

For a more authentic flavor, use freshly milled rice flour.
